Tassel Ridge® Iowa Silky St. Croix, a semi-sweet red with cherry notes on the nose and palate, is a perfect pairing for the very flavorful spice rub on Grilled Coffee Chipotle Steaks.
Tassel Ridge® Grilled Coffee Chipotle Steak
- 2 Tbsp finely ground coffee
- 4 tsp brown sugar
- 2 tsp ground chipotle chili pepper
- 1 tsp salt
- ½ tsp cayenne pepper
- ½ tsp black pepper
- 4 8-oz sirloins
- 4 tsp canola or vegetable oil
Combine coffee, sugar, chipotle, salt, cayenne, and black pepper. Set aside. Let steaks stand at room temperature for about 30 minutes. Meanwhile pre-heat grill over medium heat. Lightly brush each steak with oil. Season both sides of steaks with coffee rub. Place steaks on grill. Grill to desired doneness, about 6 to 7 minutes per side or until internal temperature reaches 145°F for medium. Remove from grill. Allow to rest 3 to 5 minutes before serving. Serves 4.
