Tassel Ridge® New York Strip Steaks with Gorgonzola Butter
- 4 8-oz New York strip steaks
- Tassel Ridge® New York Strip Steaks Marinade (recipe below)
- Tassel Ridge® Gorgonzola Butter (recipe below)
Marinate steaks 2 to 3 hours (see recipe and directions below). Heat grill to medium-high. Grill steak 5 to 7 minutes per side, or to desired doneness (internal temperature should reach 130–135°F for medium rare). Place a heaping teaspoon Gorgonzola Butter on top of each steak immediately after removing from grill.
Tassel Ridge® New York Strip Steaks Marinade
- ¼ cup olive oil
- 4 cloves garlic, thinly sliced
- 2 tsp balsamic vinegar
- ½ Tbsp dried rosemary
- ¼ tsp salt
- ⅛ tsp black pepper
Combine oil, garlic, vinegar, rosemary, salt, and pepper in glass pan or zip bag. Mix well. Add steaks. Cover. Refrigerate 2 to 3 hours.
Tassel Ridge® Gorgonzola Butter
- 4 oz Gorgonzola cheese, room temperature
- 4 Tbsp unsalted butter, softened
- 2 tsp minced chives
- 2 tsp minced parsley
Combine cheese, butter, chives, and parsley in food processor until blended. Add salt to taste. Refrigerate until ready to grill steaks.
