Tassel Ridge® New York Strip Steaks with Gorgonzola Butter

Ingredients

  • 4 8-oz New York strip steaks
  • Tassel Ridge® New York Strip Steaks Marinade (recipe below)
  • Tassel Ridge® Gorgonzola Butter (recipe below)

Instructions

  1. Marinate steaks 2 to 3 hours (see recipe and directions below). Heat grill to medium-high. Grill steak 5 to 7 minutes per side, or to desired doneness (internal temperature should reach 130–135°F for medium rare). Place a heaping teaspoon of Gorgonzola Butter on top of each steak immediately after removing from grill.

Tassel Ridge® New York Strip Steaks Marinade

Ingredients

  • ¼ cup olive oil
  • 4 cloves garlic, thinly sliced
  • 2 tsp balsamic vinegar
  • ½ Tbsp dried rosemary
  • ¼ tsp salt
  • tsp black pepper

Instructions

  1. Combine oil, garlic, vinegar, rosemary, salt, and pepper in glass pan or zip bag. Mix well. Add steaks. Cover. Refrigerate 2 to 3 hours.

 

Tassel Ridge® Gorgonzola Butter

Ingredients

  • 4 oz Gorgonzola cheese, room temperature
  • 4 Tbsp unsalted butter, softened
  • 2 tsp minced chives
  • 2 tsp minced parsley
  • salt

Instructions

  1. Combine cheese, butter, chives, and parsley in food processor until blended. Add salt to taste. Refrigerate until ready to grill steaks.
